Delicious Banana Bread

OK y’all here is the recipe I was talking about the other day. Its super delicious and super easy. Just a note, it SAYS you should mix some of the ingredients together first. Let me just say I’ve NEVER done it that way. I’ve always just smooshed it all together at once and never had an issue.

Also, Alex says the nuts are vital and the bread should never be made without them. (In case you can’t tell the last time I made this I did not put them in. Oops.)

Banana Bread

Prep time 50 minutes
Cook time 30 minutes
Total time 1 hours, 20 minutes

Banana and nut bread

Ingredients

  • 1 cup Sugar
  • 1/2 cup butter
  • 2 eggs
  • 3 medium bananas (mashed)
  • 2 cups flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon baking powder

Optional

  • 1/2 cup chopped nuts

Directions

Step 1
Pre-heat oven to 350 degrees
Step 2
Grease loaf pan lightly
Step 3
Cream sugar and butter together
Step 4
Beat in eggs and bananas to butter and sugar mixture
Step 5
Add remaining ingredients and mix well
Step 6
Pour mixture into loaf pan, tap against counter lightly to remove any air pockets
Step 7
Place in oven for 30 – 40 minutes or until top is golden brown and a toothpick comes out clean when poked into the center of the loaf.

My Pirate Cake

We went to a pool party this weekend that had a ton of people! It was fun, hot, and  had lots of talking and eating. All of the things that make a great party. Since there was a party, I baked a cake. Then I took a pretty picture of it to show you what it looked like. Looks yummy right?

But I wasn’t done there, oh no. I then took about two hours to frost it. Yup, you read that right two whole hours to frost a cake.

I’m not a freakazoid, it’s just I had to chill the cake with frosting for twenty minutes between each step. So after the cake baked I let it cool on a cooling rack for 20 minutes, then I put it on the cake cardboard and in the fridge for twenty minutes so I could frost it. So step one to frosting was to pipe a thin amount around the sides and then glob a small amount on top and evenly spread it all out to create a crumb layer of frosting. Then I stuck it all in the fridge for twenty minutes.

Then I forgot to take a photo.

So at this point I really frosted the bad boy, basically I covered the entire cake in a layer of frosting and made it as smooth as I could with my frosting knife. Then it was back in the fridge.

Finally I took it out of the fridge to decorate. I used a large cup to make an imprint of a circle in the center of the cake which I piped in black. I filled that in with a black eye patch, piped “The Pirates Pub, Est. 1857” and finally piped a black border along the bottom of the cake. It wasn’t store worthy, but I thought it was neat.

I also can’t tell you how it tastes, because despite the fact that I made it for a pool party no one ate my cake. I’m not sure what the universe is telling me.  I do know I’m now lying in bed typing a blog post because that makes me feel better.

All this baking did remind me why I’m looking forward to fall though. I can’t wait for apples to come in season so we can pick our own and then I can bake apple pies. Plus foods like chili and banana nut bread will be making a comeback in our house. Oh plus you know the leaves changing, the smells of pumpkins, and the cooler temps. Plus fall means one really important thing….FOOTBALL SEASON BABY! (GOOOOOOO DAWGS!)  I really can’t wait!

(Ultimately though, it’s really the apple pie I’m longing for.)
